This estate grown classic old-world style red was hand harvested from the Riemer Block vineyard. Following a week of fermentation on the skins, it was pressed off and barreled in French oak, using 15% new barrels. In contrast to warm climate Cabernets, this cool climate red exhibits crisp acidity, medium body and color, well-defined tannins, and an elegant minerality. Slightly heavier in body than our Cabernet Franc, it has lingering notes of subtle dark cherry with a vibrant spiciness. We recommend pairing it with barbecued meats, Asian cuisine, and sharp cheeses. Bottled 8/11/21.
